Lemon loaf with earl grey glaze

Perfect for your Easter table or to take to a friend . A super easy delicious light cake that brings all flavors of spring!

INGREDIENTS

Lemon Loaf

  • 3 large eggs

  • 1 cup granulated sugar

  • 1 cup (8 ounces) sour cream or Greek yogurt

  • 1/2 cup vegetable oil

  • 2 tablespoons lemon zest

  • 1 to 2 tablespoons lemon extract, to taste (not teaspoons) or 1 teaspoon lemon essential oil

  • 1 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt, or to taste


Earl grey tea Glaze

  • 2 cup confectioners’ sugar

  • 1/2 cup water + 2 bags of earl grey tea , steeped

  • 3 tablespoons lemon juice or 1 tsp lemon essential oil , or as necessary for consistency

  • 1 Teaspoon lemon zest


  • Make the Loaf:

    • To a large bowl, add the eggs, sugar, sour cream or yogurt and whisk vigorously until smooth and combined.

    • Drizzle in the oil while whisking to combine.

    • Add the lemon zest, lemon extract/ oil and zest and whisk to combine. Note – I used 2 tablespoons of lemon extract because no actual lemon juice is used in the loaf and I found 2 tablespoons lemon extract necessary for full-bodied lemon flavor, but add to taste.


  • Add the flour, baking powder, salt, and stir until just combined, don’t overmix. Some lumps will be present and that’s okay, don’t try to stir them smooth.

  • Turn the batter out into prepared pan, smoothing the top lightly with a spatula.

  • Bake for about 50 to 52 minutes, or until top is domed, set, and toothpick inserted in the center crack comes out clean or with a few moist crumbs but no batter. In the last 10 minutes of baking, tent pan with foil (loosely drape a sheet of foil over pan) to prevent excessive browning on the top and sides of bread before center cooks through.

  • Allow loaf to cool in pan on top of a wire rack for at least 30 minutes (I cooled 4 hours) before turning out onto rack to cool completely before glazing.


  • Make the Lemon Glaze:

    • steep tea in water and add to a small bowl, add the confectioner’s sugar and slowly drizzle in the lemon juice while whisking until smooth and combined. You may need to play with the sugar and lemon juice amounts a bit as necessary for desired consistency and flavor.

    • Evenly drizzle glaze over bread before slicing and serving.

    • Extra glaze can be spread on the cut surface of the bread like you’d spread butter on toast and it soaks right in making the bread even moister and more lemony. Or you can halve the glaze recipe if you’re not a glaze person.

Pick your poison this hallow’s eve with this super delectable witch’s brew concoction... perfect for all the ghouls and goblins out there!

ingredients

🍍 3 cups pineapple juice

❤️64 ounce bottle cranberry juice
🍎 1 bottle apple cider or sparkling Apple cider 
💛33 ounces ginger ale, 1 liter 

🔴 red food dye- you may want some food dye handy just in case you want to make it an extra  (red) bloody drink . The juices by themselves are muted colors 


🍾1 bottle( or to taste 🤣😅) vodka or any hard liquor

 (I used apple because that is what we had,  but any flavor would work ) 

** You can omit the alcohol for a kid friendly drink 😬

🧊 I pack of dry ice 

steps

Stir all of the liquid together in a large bowl, pour into your serving bowl or canister. 

You can then add the dry ice on top of mixture. Do not put a lid on the mixture. Let it bubble! 

Once the drinks are served, individual glasses can get tiny pieces of dry ice for extra effect! 

Disclaimer : a little of dry ice goes a loooooong way!

These easy sugar cookie bars are just as delicious as regular sugar cookies with hardly any work, that literally anyone can make!

Super soft, super yummy!
This recipe is one of my childhood favorites 🥰

What you’ll need:

1 box Pillsbury™ Moist Supreme™ Funfetti™ cake mix

1/3 cup oil

2 eggs

3/4 cup Pillsbury™ Creamy Supreme™ Funfetti™ vanilla frosting

or

To Make your own buttercream :

  • ½ cup unsalted butter, softened 

  • 1 ½ teaspoons vanilla extract 

  • 2 cups confectioners' sugar, sifted 

  • 2 tablespoons milk

    Cream room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in confectioners' sugar until fully incorporated. Beat in vanilla extract.

    Pour in milk and beat for an additional 3-4 minutes. Add food coloring, if using, and beat for thirty seconds until smooth or until desired color is reached.

  • 1 Heat oven to 375°F.

  • 2 In large bowl, stir cake mix, oil and eggs with spoon until well mixed. Spray pan with cooking spray and Shape dough in a 9x13 pan or round pizza pan

  • 3 Bake 8 minutes or until edges are light golden brown. Cool 1 minute

  • 4 Spread frosting over warm cake. Immediately sprinkle each with candy sprinkles from frosting. Cut into squares or pizza slices.

    leftovers? ( if there’s any 🤪) Store in airtight container.
